Think clam and prawn pilafi where the seafood is simmered in a fragrant and aromatic sauce with rice; modern souvlaki (skewered meat) that instead of being wrapped in a traditional pita bread is enclosed in rice paper but with all the trimmings; a tradtional Greek salad that is literally given the chop and presented in small tasty morsels with barley rusk croutons, and fish that is creatively teamed with black garlic skordalia (a creamy potato mash) that imparts a dramatic colour and texture to the dish.
